The flavour has piney, woody notes, also a barnyard note, differentiating it from Black Pepper. White Pepper is less aromatic than Black Pepper and can smell musty, but it has a sharp pungency with a sweetish after note.
White Ground Pepper is used in light coloured foods such as sauces and soups. Add to creamy thyme and potato gratin, creates a great background flavour. Also fabulous with fresh greens, onions and dill, served blended with some butter.
